Real Biga

I finally found a video showing Biga as I do, the same way as I learned from maestro Ezio Marinato:

This video is applied to pizza. He says he uses 10% to 25% aprox in the final dough. For bread I prefer using much more.

Example for 100% Biga Ciabatta (80% hydration):

Biga: 10 grams fresh yeast + 450 ml water + 1 kilo Manitoba strong flour. Dissolve yeast in water, as in the video. Add to flour and mix in slow speed or by hand until you get the consistency and the appearence you see in the video. Let ferment 16-18 hours at 16-18 degrees celsius.

Final dough: all the previous biga + 3 grams fresh yeast + 350 ml water + 20 gr salt + 3 gr malt. Add only small water at the beginning, then once the gluten is made, pour the remaining water. 

Bulk rise would be around 1hour. Think that all the flour has been maturing since the day before. Then divide and bake in 1h15m or 1h30m. Biga is used in order to accelerate the maturation of the dough and deepen its flavor.

Example for 90% Biga Ciabatta (80% hydration)

Chocolate, raisins and cinnamon sweet sourdough

Hi bakers! 

Today I want to share with you a completely new experiment of mine, a loaf that was in my mind for a long time but I have never had the opportunity to bake it. 

I tried to create a formula for a slightly sweet bread but I was so scared because of the sugar I had to add: will it speed up the fermentation process? will it ruin the texture of the final result? Those two questions were all I could think of.

I decided to give it a go, merging different formulas from the internet and from different books because baking is something that helps me with my anxiety as you have to be precise, gentle, determinate but also emphatic.

The ingredients:

115gr chocolate leaven

400gr water

400gr white bread flour

100gr whole wheat flour

40gr cacao

125gr raisins

50gr sugar

cinnamon

The method is the same as a normal country bread, I added the sugar and cinnamon when I added the salt and the raisins at the first round of stretch and fold during the bulk fermentation.

I am really happy with the result, the crumb is open even if there are the raisins and the sugar, the flavors are mild but you can recognize all of them; it is a perfect breakfast bread with some almond butter :)

Ciabatta...A high hydration challenge for new bakers

So let's talk ciabatta. The wonderful "Italian Slipper" as it is known. Characterized by large holes and a soft, airy crumb. The high hydration dough can make it extremely difficult to work with and shape. Ciabatta is one of the ultimate challenges for a new baker like me. Yet I was persistent. My first loaf came out of the oven looking AMAZING but had a crumb like store bought sandwich bread and tasted....well...like cardboard. Attempt number two resulted in a decently open crumb and much improved taste, but still lacked what I was searching...no...questing for. Fast forward to when college lets me try for a third time. SUCCESS!!!! Taste was spot on, the holes were almost too big. There is still significant progress to make, but I feel like I'm finally on the right track.

Sponge:

200g bread flour

2tsp instant yeast

200g water

Main recipe: 

500g bread flour

360g water

14g salt

2Tbsp extra virgin olive oil

 

Steps:

1. 3 hour autolyse with sponge

2. Combine the rest of the ingredients and mix, let rest for one hour

3. 5 stretch and folds, 30 mins apart

4. Divide and shape

5. Let proof on a baking sheet for 30 mins

6. Preheat oven to 450 with a tray of water on the bottom shelf

7. Bake until golden and the bottom sounds hollow when you tap the bottom (took me about 35 minutes for 3 loaves at the same time).

The kneading process
1. Put water in bowl and put instant yeast.
   After 1 minute, melt the instant yeast.
2. Evenly mix the sugar, salt, and skimmed milk powder,
then dissolve in the bowl.
3. Add whole egg and mix.
4. Gently dissolve the butter into the bowl and mix.
5. After adding flour
   Mix evenly until the flour is invisible (dough temperature 22℃)
6. Fold the dough several times with your hand and make it round.
7. Cover the vinyl and leave the refrigerator for 15 minutes.
8. After 15 minutes of rest, the first fold (folding)
   It folds until it becomes a elastic ball shape.
9. Cover the vinyl and leave the refrigerator for 15 minutes.
10.After 15 minutes of rest, the second fold (folding)
   It folds until it becomes a elastic ball shape.
11.Round in a ball shape.
12.Cover the vinyl and leave it at room temperature for 20 minutes(dough temperature 24 ℃)
13.After rest at room temperature, wrap the dough in plastic vinyl
   Push in a square shape with a push rod.(Size: 18cm*18cm)
14.Rest in refrigerator for 12 hours
After completion of the 12 hours refrigerated rest,
   After wrapping the pastry butter with vinyl that was stored in the refrigerator
   Push in a square shape with a push rod.(Size: 11cm*11cm)
16.Place the butter on the dough at a 45-degree angle.
17.After pushing the square part of the dough slightly by pushing it,
   Fold the dough slightly while pulling it.
   Press the overlap part of the dough.
   I wrap the butter completely to prevent leakage.
18. Push the dough with a push rod.
19. Cut both sides of the dough
20. 4 Folding 1 time
21. Push the dough flat with a push rod.
22. After wrapping the dough in plastic vinyl, rest for 1 hour in the refrigerator.
23. Push the dough again.
24. Cut both sides of the dough
25. 3 Folding 1 time
26. Push the dough flat with a push rod.
27. After wrapping the dough in plastic vinyl, rest for 1 hour in the refrigerator.
28. Push the dough again.
    (Push it until the dough thickness becomes 5mm.)
29. After wrapping the dough in plastic vinyl, rest for 1 hour in the refrigerator.
30. Cut to an isosceles triangle.
    Base 9cm, height 18.5cm
31. rolling the isosceles triangle.

32. final fermentation at room temperature after panning (4 hours)
33. During the final fermentation
    Oven preheat(set to oven temperature 250℃)
34. Put the fermented dough into the preheated oven
35. Set the oven temperature to 200 ℃ after putting it in the oven.
    Baking 15 to 18 minutes
36. Remove the croissants from the oven and cool
37. Tasting after completion

Test results
1. It is possible to make croissants easily at home by applying no-kneading method (kneader is not necessary)
   You do not need to use a lot of force for dough.
2. Fermentation titration: The inner surface is wide open and the volume is moderate.

* Note: Always be careful when using the oven
(It is very hot, so use it after wearing very thick oven gloves)

A new brick bread oven, a year later

There are several things I have learned from building my brick bread oven that may benefit someone planning to build one.

Size.

It's a compromise.  Too big and it takes a forest to heat up, but can bake large quantities of bread in one bake.  Too small, and the oven won't maintain it's heat.  The advise I got was to build it with a hearth that is 30" x 36".  I thought that would be too large, but it turned out to be about right.  I can bake up to 8 loaves of bread at a time, but it only takes a couple of hours to heat up the oven.  One layer of firebricks laid on edge is sufficient with lots of insulation.  There is no need for extra mortar over the barrel top.

Insulation.

There is no need for expensive insulation designed for insulating boilers in steam plants.  Rockwool insulation from your local lumber yard does the trick perfectly.  It's rated for 2000*F which (by my estimate) give a 3 to 1 safety margin.   For the outside of the firebricks to get over 650*F, the inside of the oven would be a way to hot for even pizza.  I wrapped the firebricks with one layer of 6 inch insulation, plus an addition  layer of 4" insulation for a total of 10 inches of Rockwool insulation.

I wrapped industrial grade aluminum foil (available at Costco) over the fire bricks to reflect heat back into the brick and minimize drafts.  I also wrapped foil over the outside of the bat insulation.

It's true that you can't have too much insulation.  If I was doing it again, I would probably install an additional layer of insulation.   Lot's of insulation along with adequate thermal mass equates to a longer baking window.  If the oven is up to temperature, but the dough needs another half hour to rise ... no problem if the oven is built right.

Thermal couple

Installing a thermal couple was the best piece of advice I got.  I drilled a hole from the outside of the firebrick about half way into the brick, half way up the wall.  When heating the oven, this is the temperature gauge I watch.  You can get a thermal couple on ebay for just a few dollars.

Monitoring the temperature of the inside of the oven while the fire is on, is meaningless.  The oven walls will get up to 600*-700* very quickly, but if you raked the fire out at this stage, the oven would cool down very quickly.  I ignore the inside oven temperature until the  thermal couple, measuring the temperature of the firebricks in their outer half, is up to 400*F.  At this point the inside temperature will still be about 650*.  I then rake out the fire and seal the door.  An hour later the inside of the oven will be about 450* AND the temperature of the WHOLE firebricks will be close to the same.  In other words, I have a thermal mass of over 1500 lbs of brick at 450*  Putting 20 lbs of bread dough in the oven for 40 minutes does not lower the temperature much.  And with all that Rockwool insulation (and a well fitting insulated door), the oven will stay hot for days.

If I bake once a week, the oven will still be warm (about 80*) before I light the new fire.  If I don't bake for several weeks then the firebrick and insulation will have absorbed moisture from the humidity in the air.  It will then take longer to get the oven up to temperature because it needs to heat up this moisture, and 'boil' it off.

It's easy to get complicated with steam injection but there is no need.  A good garden hose sprayer on the mist setting does the trick.  After the bread goes in the oven, I just spray in a mist of water before sealing the door.

Extending the roof to provide some dry counter space by the door of the oven, is well worth the effort.

Sweet Potato Buns / Rolls

Some of my customers asked if I was making buns for Thanksgiving dinner, so I said I'd give it a go. Sweet Potato buns seem to be just the thing. I did a sweep of this site and the internet in general to look at recipes; none quite filled the bill (the recipe needs to be easily scalable to several dozen buns and the ingredients can't be too expensive or difficult to handle, or time-consuming to prepare). So I tested and tweaked, and came up with the following.

The sweet potatoes were roasted then put through the food mill, so the resulting mash is not too wet. If you are using boiled sweet potatoes or something like pumpkin or squash, you'll have to adjust the liquid in the recipe accordingly to make a soft dough.

I mixed the wet ingredients, then the dry ingredients and then mixed them all together. I used the Ankarsrum and let it run for probably six to eight minutes, or until a soft, sticky dough was achieved. Note that with the sweet potato this will indeed be a sticky dough! One thing to note - rather than using two eggs, I used one egg and the equivalent to another egg using ground flax seed mixed with water 1:2. That makes it much easier to scale (e.g. if you need 75 grams of this, then you can use one large egg plus about 8 grams of flax seed mixed with 17 grams of water). It's also cheaper and the flax seeds are a nice addition to the buns. The durum atta flour also adds good flavour.

I left the dough to rise for about two hours, folding gently once during that time. When it was risen and puffy, I scaled the buns to 85 grams, shaped them into rounds and put them in a greased pan, not quite touching. They then went into the fridge overnight (covered with greased plastic wrap). In the morning I baked them in a 350F oven, straight out of the fridge, for about 20 minutes, turning the pan once.

I'm really happy with these. The aroma of the dough and the finished buns is excellent, and they taste really good. The crumb has that nice 'shred' you look for in an enriched bun, and is nice and moist. A keeper!

Note that some of the buns don't have smooth tops. This is because I put half of them 'pinched' side up to see how they would look. It didn't add anything, so I'll bake them all smooth side up in the future. :)

Another go at 100% Durum (Pane di Altamura)

Happy New Year fellow bakers!
It has been a little while since I have posted anything new, but it’s not for lack of baking.  I have a little list of favorites that I have written about before that I keep going back to.

But a few weeks back, Gaetano (inumeridiieri) posted a loaf that inspired me to get back to my two-year-on-again-off-again attempt to reproduce Pane di Altamura.  I have gotten some excellent results the past month to share.

In his post, Gaetano described a type of leavening that, as far as I have found, is not available in the U.S. It is called Lievisol (pictured about ¾ down the page of his post), and though I could not find a lot of information about it, it appears to be a blend of wheat flour, a malted flour and either instant or active dry yeast. I began my trials by simply adding a little barley malt and a small amount of instant yeast (IDY) to the dough mix along with my 100% extra fancy durum starter.

Initial results were very encouraging. My first bake followed his formula as closely as I could, using 1.5g IDY and 11g malted barley flour as a replacement for the Lievisol and an overall hydration of 68.5%. The levain was 100% hydration and 43% of the flour was prefermented. The loaves turned out ok, but they were quite overbaked and a bit underproofed. I repeated the bake, correcting for these things and here are some photos of the loaves.


The malt seems to have little effect other than to darken the crust, at least in my trials, so I have eliminated it.  However, the addition of the IDY seems to give exactly the boost to the dough that I had not been getting with the levain alone. The flavor was more tangy than I expected, perhaps because of the long proof times. The crumb on this loaf is nice but much more uniform than the loaves found in Italy.

I baked a few more batches, playing around with overall hydration, pre-fermented flour %-age and bake times and temperatures. I even tried to do the traditional folded shape of Pane di Altamura, but it was not a real success as the two halves of the loaf didn’t really integrate into a single loaf. Some of the results below.

  

I did have some shaping issues, the large groups of holes were probably due to over flouring the bench during shaping. However, the taste was improving, the uniformity of the crumb is a bit more like artisan bread and the crust is blistery and crackly.  At this point, after some 5 tweaks, I have baked this last version a few times with really good results.

This version has an overall hydration of 73% with 36% PFF. [6]



The main things that I have learned so far:
-Durum needs a long proofing time to develop flavors.
-Temperatures in excess of around 72˚F tend to make the dough sticky and unmanageable for me.
-Using a couche for final proof helps a lot. And don’t try to proof dough directly on parchment.

For the purists out there (and I consider myself among that group), bakers yeast is not traditionally added to Pane di Altamura. So my next batch of trials will be an attempt to eliminate it.  I have also not mastered the folded over shape, and I still consider it a challenge for the new year. However, the results so far, thick,brittle and nicely honeyed crust, open crumb and good flavor suggest this is the right direction.

My quest for “Old-Style” San Francisco Sourdough bread: A tasty digression

This trial builds on what I learned from my first two trials. It is a bit of a detour in that I have made some changes that, I hope, result in a bread more to my current taste, even though it deviates from the breads of the old style in having higher hydration and whole grain flours.

* The starter should have been fed within the preceding 3 days. It may be refrigerated after the last feeding. Optionally, one can make extra starter with this formula to save, after being fermented, for use in generating the next sponge.

  1. Dissolve the firm starter in the water.

  2. Add the high-protein flour and knead until all the flour is well-hydrated.

  3. Ferment at 80ºF for 9-10 hours.

  4. Refrigerate overnight or up to 3 days.

Procedures

  1. In the bowl of a stand mixer, add the water and flours and mix at Speed 1 to a shaggy mass. Cover and let rest at room temperature for 20-60 minutes. (Note: This autolyse step is my addition. It was not used in the original method.)

  2. Sprinkle the salt over the dough and add the sponge in chunks. Mix at Speed 1 for 1 or 2 minutes until the ingredients are evenly distributed.

  3. Mix at Speed 2 for 10-12 minutes, until an medium window pane stage of gluten development.

  4. Cover the mixer bowl and let the dough rest for 20 minutes at 90ºF.

  5. Pre-shape as boule, cover with a damp cloth or plasti-crap and let rest at room temperature for 30 minutes.

  6. Shape as a boule and place in floured banneton. Place banneton in a plastic bag and seal.

  7. The journal article says the bakery proofed for 5-8 hours at 85-90ºF. Monitor the loaf frequently after 4 hours using the “poke test.” Proofing is sufficient when the dough is poked with a finger and springs back to fill the hole slowly.

  8. Place the banneton in the refrigerator for 8 to 24 hours.

  9. Pre-heat oven for 1 hour at 500ºF with baking stone and steaming apparatus in place.

  10. Just before baking, transfer the loaf to a peel and score as desired.

  11. Bake with steam at 460ºF for 15 minutes, then for another 25-30 minutes. (I did the second part of the bake with the oven set to 440ºF, Convection Bake.

  12. Remove to a rack and cool thoroughly before slicing.

Okay. This is more that a “detour.” It's a different bread. It is a really good pain au campagne, I would say. The crust is chewy. The crumb is tender. It is moderately sour – less so than I expected, actually. But it has a predominant sweet, wheaty, mellow flavor. I think there is a lot of lactic acid influence there.

 I will be getting back to my quest to replicate old-style San Francisco Sourdough, but this diversion produced a bread I am going to want to make again.
