Sourdough Ciabatta Pizza recipe?
Can you use the Ciabatta recipe for pizza dough? I like to make a pizza once a week and the ciabatta looks like fun to play with. Anyone have any tips on how which sourdough ciabatta recipe converts to pizza easily?
Yes, you certainly can use a ciabatta as a pizza dough. I've used this ciabatta recipe (not sourdough though) for pizza a number of times at it is great. It is too slack a dough to toss up in the air to show off for the kids but the results are excellent.
Thanks for the link! I had seen that but prefer the 'sourdough' flavor and I'm not experienced enought to convert that recipe to one using a starter ...was hoping perhaps someone else had and would pass it on :)
Thanks again :)
Just posted this in response to another post as well, but it fits here too:
Ciabatta (a bit drier than normal, tho'), makes a wonderful pizza. I've make PR's chiabitta, but substitute 100% hydration starter for 1/2 the flour & water the poolish, and for 1/3 in the dough. I also add a Tbsp of oil and a Tbsp of honey on occassion. The oil makes the dough softer to shape, and the honey gives it a bit more flavor.

PS: PR gives a range of water -- I forget what it is exactly -- and I use just a bit more than the minimum called for.
