Kirkland org AP flour

Is anyone using this bulk flour from CostCo?

The Kirkland is also org hard red.  $20 for 2x 10lb.  11.5% or greater.

Usually I use KAF 11.7% when CostCo has it in 12 lb bag.

And haven't seen the KAF there for a while.  Only the KAF bread.

That thread is a good read, but nothing to me that is definitive that would affect what I'm baking.  Not a commercial baker.  I'll have to study the packaging a little closer next visit.

I'm hoping the KAF 12lb will return soon as it did around this time last year.

Costco flour is produced by Central Milling for Costco. I called them up to confirm this (i.e. Central Milling). I've been using it for at least 5 or 6 years now - absolutley no complaints....,

is it malted like CMs Beehive?  Or not malted ... if you know.

Store brand flours are often contracted out to a nearby mill.  I've never seen Kirkland flour here in the Midwest, but if I did it would not surprise me at all if the bags had different manufacturer's print on them.

I heard a lot of people use Kirkland flour from Costco, especially for baking. It's pretty good quality.

I have been using the Organic Kirkland AP flour that comes in the green and white bag for most of the past year. I buy it because it is organic and the King Arthur flours at Costco are not. It makes delicious sandwich bread in a 50% whole wheat recipe with Bob's Red Mill organic whole wheat.

The local Costco near me sells a lot of flour, including King Arthur AP and King Arthur Bread Flour. I think they still sell some brand of hotel flour which is bleached and bromated, so I won't buy it.

It is good to know that Whole Foods has some high quality house brands. I may try them sometime. However, I am happy with the Kirkland AP flour for the regular 71% - 73% hydration breads that I make.
