Recommend a Book for a Sourdough Rye Lover?
I'm a little overwhelmed by the amount of bread books out there.
Any recommendations? I love traditional European dark & heavy sourdough ryes, and I mill my own flour.
I have been using Hammelman's 'Bread' for a couple years, really like the organized layout of the recipes, but I've exhausted that book and am looking for something new.
of inside the Jewish Bakery fame is coming out iwth a book devoted to rye breads, The folks here on TFL were the recipe testers for his recipes. From what I can tell, it looks to be the best rye bread book ever written with recipes from all over the world. it should be out soon

Thanks for the plug, brownman. The book has its final title, The Rye Baker, and is currently in press with a publication date of mid-2016. Publisher is WW Norton and my editor is Maria Guarnaschelli (Google her if you don't know who she is). The book contains about 75 recipes for rye breads from all across Europe, from Spain (! who knew?) and France in the West, across Holland, Germany and Scandinavia/Finland to the Baltics, Belarus, Russia and Poland and the Alps. Hopefully, there'll be something for everybody.
In the meantime, I'm baking my brains out for the photo shoot, which is gonna take place in a couple of weeks. Here's my latest ouput -- top to bottom GOST Borodinski (Russia), Honey Flaxseed Crispbread (Sweden), Westphalian Pumpernickel (Germany), Christmas Zelten (Italy). More to come.
The Honey Flaxseed Crispbread was one of the top favorite rye breads that I made during the test baking. Terrific stuff!

Is there an ETA on Stan Ginsberg's new book yet? I'm looking forward to this one
