zucchini parmesan loaf
Has anyone a good recipe to share?
I used this one.
It's OK, but not thrilling.
- 3 cups all purpose flour
- 1 cup zucchini, peeled and shredded
- 1/3 cup sugar
- 3 tablespoons Parmesan cheese (more if desired)
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/3 cup butter
- 1 cup buttermilk
- 2 eggs, slightly beaten
- 1 tablespoon onion, grated
I think I would have added more cheese, and definitely some herbs and spices, it seems rather bland to me. It would be good for a bread you were going to serve with a spicy spread as the bland taste would allow the spice to be highlighted.
But to eat without a spread I think its definitely needs herbs or spices, try some rosemary, or parsley, or even pesto or Greek spice mix, to enliven the recipe.
I like grated Asiago cheese,,,,,,,,,,,,,,,,, with cheddar on top..... q
i threw walnuts and leftover starter into mine..it is really more a quick bread,even when the starter was added..i also dumped some raisins in the back of the fridge in (i soaked them in hotwater first then drained them)..they were so dry i thought they would suck all the moisture out of the dough>
