I don't know where this site was founded but I am enjoying reading other peoples feedback. By way of appology I am sorry I slandered fans of parchment. It isn't really fair but if you use only well floured linen and transfer to a pelle, it does improve the bread immensely. Give it a try. Appologies again.

No sweat about the comment. It hit a nerve because I've tried very hard to make this a place that is comfortable for everyone from first time bakers to bread machine users to folks with 30 years of baking experience. Such things as I've avoided the temptation to go back and update my early lessons with better looking loaves now that I've become an intermediate baker. The loaves in those look awful compared to what I can do now, but leaving them there gives newbies something they can reasonably aspire create to in their first few attempts.
My thought on moderation is that there are plenty of unmoderated newsgroups and bulletin boards for people who want to sneer at people beneath them (and, unfortunately those folks often dominate those groups). I've been doing everything in my power to avoid that here, even if it means sometimes getting up in someone's face.
I may have overreacted to what, upon rereading it, I think may have just been an off hand comment on your part though, so my apologies for jumping on you. It is good to have you with us.

qahtan, I know this is kind of off the subject, but I like your screen name and was just wondering if it means anything and how do you pronounce it correctly? Is the name from any particular nationality? Or am i just reading way too much into it, lol =)

Qahtan pronounced Kat-an, the black Saluki here was Qahtan, meaning True Arab. Saluki is an Arabic word meaning noble one, Saluki's were buried with the Pharaoh's and remains of them were found in tomb of people like King Tut. Related to the Greyhound, in peak condition
can run 45 miles per hour. The blonde in the picture is Sheba, an Afghan,,,,,,, both were gorgeous... qahtan.;-))))
