first sd loaf
Had a stretch of 25 days w/o baking, with visitors, conference and vacation... I'm back! With new adventures into wild yeast stuff...
Goldrush Sourdough Starter after 24 hrs, just enough tang but not too sour. Had my usual problem of insufficient final rise, but enough to declare moderate success.
Sourdough does require more time to develop the rise. Keep going!

Working with wild yeast starter is something I've been avoiding until now. It wasn't as bad as I had originally feared, but you're right, everything took a bit more time. Well worth the wait.
I said your first loaf was really good and much better than mine some 40 years ago. My failures continued for a long time afterward too. Wild yeasts must have been harder to tame then :-)

I mean, it came in a packet in dry form! Doesn't get much more tamed than that :D
