Are eggs necessary in quick breads?
I would like to make a banana bread to take to work but all recipes have egg in them. I need it to be eggless. Is that possible? Should I substitute something else for the egg?

The value of reading - never mind! I saw the thread further down for an eggless recipe. :o)
In place of one egg, you can use 1 tablespoon ground flax seed in 3 tablespoons water, let sit until a 'gel" forms. This is regularly used in gluten free baking.
