First Bake Cusinart CBK-110 FAIL!
Just tried my FIRST loaf in the new CBK. Used the included recipe for rye bread as it was SIMPLE and I had all the stuff:
Bread Flour
Rye Flour
Salt
Yeast as per their instructions.
Came out VERY flavorless - dense & doughy...BIG FAIL!
Kinda puzzled as the recipe seemed so simple... Is it just a crap recipe?
I know this is hard to get comments on but ANY ideas would help. TKS!
Another note - it seemed the machine was having a rough time with the mixing and kneading process. I'm wondering if the rye was too much for it... the doughball never really got moving around..
Is it a bad recipe - could be. No info to say anything - good or bad. Enjoy!
Alan, it sounds like there was not enough water, or too much flour for the amount of water you used.
How did you measure them?
Their instructions are to spoon flour, one spoon at a time, into the measuring cup that comes with the machine, then sweep the excess, i.e. about 120g of flour per cup.
Scooping flour from the bag will give you 150g of flour per cup which is too much and the ball of dough will be too stiff and not even kneaded or fermented properly.
MEASURING INGREDIENTS
Important note: The most important rule of making bread:
Use exact measurements. This is the key to successful bread
baking.
With wet ingredients, use only liquid measuring cups with the cups/
ounces marked clearly on the side. After filling the measuring cup,
place it on a flat surface and view it at eye level to make sure the
amount of liquid is exact. Liquids must be room temperature.
With dry ingredients fill a dry measuring cup with a spoon and then
level off the measurement with the back of a knife or a spatula to
make sure the measurement is exact. Never use the cup to scoop the
ingredients directly from container (for example, flour). By scooping,
you could add up to one tablespoon of extra ingredients. Do not pack
down.
Actually, the flavor you use is based on the flavor of the flour and the saltiness of the salt. Just a little deviation and the taste will definitely not be accurate. Try again to see how you mix the termite ratio. Furthermore, it is possible to learn and combine several types of sweet flavors
