I'm not sure what you are looking for. Are you looking for ways to dye the dough? You can use food coloring, beet juice, blue pea flower, etc for colors. Lots of options for coloring dough, though the colors may come out muted. You could do a bread with red or blue filling. Maybe a filled braided with strawberry or blueberry jam inside? Drizzle colored icing on top?
Vic, you can purchase freeze dried berries, strawberry/raspberry for red and blueberries for blue and then grind them into a powder to add to your dough to colour it, quite simple and natural.

The bread that i had was with blue berry, sugar on top of the bread, and cranberry in it. The blueberry, cranberry where inside the bread.
