12 Grain Italian
I used K.A. Organic 12 - Grain Flour Blend...Wheat, Amaranth, Quinoa, Sorghum, Brown Rice, Spelt, Barley, Millet, Oats, Rye, Buckweat, Corn. to replace some..about a cup of the bread flour in P.R. Italian Bread recipe with a Biga... I thought it's time to start sweeping out some of the Holiday feasting and this would be a beginning! The bread tastes delicious..it has a sweet toasty flavor.

That looks scrumptuous. Alternatively, you could buy a little of each of those flours from the bulk bins at your local food co-op or Whole Foods. That way you could avoid paying for shipping and experiment with proportions.
I would love to find so much variety and organic and sure would be a lot cheaper...I did get a pretty nice special on the batch I ordered...it would just be nice to find more locally!

Those are beautiful. Did you bake those during all the rain? I'm in LA ( You're in San Diego- right?) and it had been pouring, sometimes my breads act up on rainy days.

Thank you Marni....I think it might have rained the day I baked these but I really can't remember...but I love to bake bread when it's raining! I guess you had your share of the rain too! It has been a long dry spell so it was welcome here!
