Xmas goodies are gone....

when you shortbread and mince pies are finished....made some of these, coconut slice...yummm

... apricot jam :-)  Still use my grandmother's recipe that pre-dates WW2.

I remembered these from childhood and had to search the net...this recipe is very basic but with any red jam....they are lovely.

Apricot Jam Coconut Squares

Makes 15
Total time: 60 mins

INGREDIENTS

Base

  • 125g butter, chopped
  • 60g castor sugar
  • 1 large egg
  • 150g cake flour
  • 400g smooth apricot (or other favorite) jam

Topping

  • 2 large eggs, lightly beaten
  • 80g castor sugar
  • 160g (2 cups) desiccated coconut

METHOD

  1. Preheat the oven to 180°C and line a rectangular or square dish (16cm * 26cm) with non-stick baking paper to hang over sides.
  2. In a medium mixing bowl, beat the butter, sugar until light and fluffy, mix in the egg and combine well.
  3. Sift the flour into the butter mixture and mix well.
  4. Spoon into the prepared dish and evenly press down into the base.
  5. Bake until lightly golden, about 15 – 20 minutes.
  6. Remove the base from the oven and let cool for 10 minutes.
  7. Spread base with jam.
  8. Combine the topping ingredients together and spread over base and jam, continue to bake until the coconut is golden, for a further 30 – 40 minutes.
  9. Completely cool before cutting.

introduced over time; this one I got from my sister who said she got it from my mothers cookery book, which was transcribed from my gran's et cetera.... En passant, my mother had "friend" who would generally alter or leave out one or more ingredient from her recipes, claiming they were family secrets. One of her tricks was to substitute Orley wip for fresh cream, so the skulduggery did not always last too long.  Cést la vie!

thats the same one....lol one extra ingredient 1 tsp vanilla....a great recipe.

I used Blackcurrant jam with blackcurrant bits through the jam, but you can just use your favourite jam. But they are so lovely, I have a soft spot for coconut. Here is the link http://www.taste.com.au/recipes/raspberry-jam-coconut-slice/93504c61-43a9-4692-b57b-eb95171bff24  The method is dead easy, whizz up in processor and just pressing the dough into the pan, no rolling. You get quite a few in a batch depending on how big you cut them...lol. I just tried out that link, didnt take me straight to the page, but took me to taste.com to browse so put in coconut slice and got it, so copied the link there which did take me straight to the right page try this link
