Just another panettone post

I made three panettoni for my family Christmas, and I'm very happy with the result. There was some discrepancy between final proofing temperatures due to proximity to the oven light, so one of them was a little shorter than it could have been, but the flavor and texture was great on all of them.

 Traditional raisin and candied orange

Chocolate with candied orange (next time I would use more candied orange, this time it was only 25% of the mix-ins)

Crumb not pictured, the third and tallest one was all chocolate.

This was with the Roy Shvartzapel recipe btw. Converting my stiff starter to 45% for three refreshments has worked well in place of making an actual lievito madre.

Rather... a flippin marvellous panettone post. Very impressive. If only all "just anothers" were like this.

Thank you, Abe. I really feel like I lucked out getting into panettone this year. I only had one flop where I forgot to add the salt, but the second far exceeded my expectations, and every other since has been just as good.

I can tell from looking at those silken tops, that these were tender and delicious! I've never made chocolate and orange, now I want to. I wish I had a slice!

Thank you! They were tender and delicious. I thought that 1:1 orange to chocolate would be overwhelmingly orange, but I really should've done it anyway. As it was, it didn't taste a whole lot different from the plain chocolate.
