Literally years. Pandemic happened, then I don't even know what. I was planning to take trip to Iceland and about 3 weeks before departure, the world basically shut down so instead we engaged in some construction which meant that my oven had to be stashed. I finally dusted it off and did a couple of loaves with some old flour. I had been peeking in here every so often but happy to see you are still blessing the forum ! Good to see you dude are still holding down the fort ;)
Congratulations on getting back to baking and having not lost a step after several years. That baguette is just perfection. I fear what my baguette would look like if I didn’t bake one for even 6 months.

Hard to tell that you haven't been baking these all along. (Have you 🤡?)

My dog Baz passed away during the pandemic. Worst ever. Your avatar made me think of my little buddy just now :/
Without your description, the picture alone would have made me think you'd only been away from making baguettes for a month or so.
Well done!
Paul
Condolences on the loss of your pup.

Merry Christmas Geremy.
