Can't get fine flour on HAWOS mill?
Hi there, I'm totally new to milling and have bought a second hand Hawos Billy 2. Apparently it was only lightly used for a year so should be pretty new. Anyway using normal Organic Wheat I can't seem to get a fine flour even on the lowest setting? Does anyone have a sample photo of what can be expected in terms of flour texture on the lowest setting of a Billy 2? I've never done this before so I'm not sure what to expect as normal or whether it's a matter of their being something wrong with my mill? When I put the same flour through a couple more times it did get finer but still not what I'd expect. I know it's not going to be like commercial white flour softness but I didn't expect it to have visible chunks of wheat in it?
Any help or tips would be greatly appreciated :)
Hi,
I have the Hawos Billy 100. I can mill white wheat on the lowest setting, however when I mill red wheat (larger puffy berries) I have to raise the grind to 1.5. The results are typical stone milled whole wheat flour with flecks of bran. The germ is fine. I occasionally sift the flour to get a medium flour using a #40 mesh.
I also mill rye to feed my rye sourdough culture. I set the Billy on 2 for rye berries.
I don't get wheat "chunks". The grinding stones are supposed to be self sharpening. The pictures are milling some red wheat berries on 1.5 setting.

Thanks so much for getting back to me and sharing pics :) I'm a total newbie and haven't even tried baking with it yet haha. So yours definitely seems finer than mine.. I did expect bran in it obviously but the photo below is the texture I got after passing in through the Billy 2 on 1.5 setting THREE times. It still feels gritty like coarse corn meal if you know what I mean. I'm not sure the different between white and red wheat berries? I just bought organic wheat from the local bulk foods store.
I suspect that the stones are clogged and need cleaning. Try running the mill on a coarse setting for a short time without any grains. Also try running some brown rice through on a semi coarse setting. You can also dismantle the mill for cleaning the stones. Here is a link to the manual you can down load.
