New baker
Greetings all. As you might guess from the subject line, I'm a new baker. I've baked three loaves so far and I am pretty astounded that it worked.
I don't have a mixer and I'm physically unable to do strenuous kneading so I'm focused on no-knead breads in a dutch oven. So far my main source of information has been YouTube videos. My MO, when I see something I want to make, is to watch dozens of YouTube videos with different people making that item their way, and then distilling them down to how I'm going to do it.
Being exposed to all the different things people in the videos do leaves me many questions about why they do it that way and what is the effect on the bread. So far I've been doing it the simplest way I've seen. Hopefully I will find the right forum to ask those questions here and maybe branch out my technique..
