We did a kitchen remodel a year ago and bought a Bosch 30" double oven to replace a GE double that was only OK.  The Bosch oven DOES NOT HOLD TEMPERATURE!!!  I get temperature swings of at least +/- 30 degrees (F) every day.  That is to say if I set the temperature at 350'F, it typically swings between 315'F and 400'F every 15-20 minutes!  I recognize that an oven will not hold a precise temperature, but this one isn't even close!

I've had service on the unit twice, both times failed to solve the problem.  Bosch has promised that I would get either i) a replacement or ii) my money back within a week a number of times.  After multiple promises from Bosch I've  still not had resolution and this issue has been ongoing since last May!

Makes all kinds of baking quite difficult.  VERY DISAPPOINTED!

I don't know of any oven that stays precisely at the set temp, with a less than 10F variation. That's one advantage of a baking steel/stone... it mitigates the air temp swings a bit even if you don't set the baked  good on it.

I have a four year old Bosch series 500 wall oven. When I set the temperature at 350° it will overshoot up to 415 and then cool down to 317. Basically 100° temperature swing. That’s OK if you’re doing a three hour turkey, but if you’re baking cookies or a cake and a narrow timeframe it’s a disaster. They replaced electronic parts when it was new and still didn’t fix it. It’s a design flaw. And I see years later they still have the same design flaw. Complete garbage. Additionally, when the halogen bulbs were put it at the factory someone touch them with their bare fingers which caused the lightbulbs in the oven to burn out the first time I used it.

+/- 100F is way out of line. +/-25F or so seems reasonable though.

…double oven with “moisture plus” (requires plumbing water to stove) steam injection in the upper unit. Both ovens have proofing, and many other, functions. The steam and proofing are great features for bread bakers. The modal dialogs (OK, OK, OK…) and algorithmicaly not-very-“smart” procedural sequences are occasionally mildly annoying, but after using for 6-ish months, I’m mostly very happy with the ovens.
