Cinnamon Raisin loaf adapted from Ken Forkish’s book
Hi,
Just sharing a recipe I found to adapt Pain de Campagne from my favorite book Water, Flour, Salt , Yeast by K. Forkish.

I divided the dough in half and made one Pain de Campagne and one Cinnamon Raisin. Both ? delicious!
Beautiful Crumb! Did you proof in the fridge?
Nice bake. I just made something similar this morning without the cinnamon.
