I'm Victor from Seattle. Still looking for a 100 percent whole grain recipe for a naturally leavened loaf that I like as much (if not more) as Maurizio Leo's favorite SD recipe which is my go to.

For my first topic I'll be posting something about the Proof Bread micro bakery in Arizona over in "Bakeries, Shops and Pizza Joints". Fair warning - I've never been a customer and I've never sampled the bread. It's just an interesting story to me.

I love to watch the video’s from Proof. 

If I was 30 years younger I would do what they have done. It is al about good natural food. 
Now I am just happy baking good bread for me my wife.

Bread making for my wife and kids is very satisfying indeed. I grew up in a baking family although they were bakery workers and not artisan bakers. My dad founded and operated a bakery that made bread snacks mostly bread sticks - a very commercial small business perpetually on the edge of going under. He always complained about a competitor of his, John Gardetto.. Just recently at a Costco I saw a box of a Gardetto product. Can't remember if it was cookies or some other snack. It was pretty obvious who was the better businessman.
