Not willing to let a rare, unscheduled working Sunday put the kibosh on a planned corned beef pie, I was able to get a nice 3lb flat cut corned beef simmering in the oven. Every corned beef pie I came across called for the canned stuff. No that will never do! I am winging it on an all original fresh corned beef filling! Taking a quick lunch break, updates to follow.
