Trying to decode a German cookie recipe

I'm just hoping someone can help me figure out what 5pcs fresh protein means in a German recipe.

Does it mean 5 egg whites?!

Here is the original recipe: http://www.kochbar.de/rezept/454010/Kekse-KOKOS-MANDEL-MAKRONEN-mit-Quark.html

and that translates to:

Ingredients
5 pcs. Fresh protein
pinch salt
160 gr. Sugar extra fine
tbsp Bourbon-vanilla sugar
70 gr. Magerquark drained in the sieve
8 drops Bitter almond oil
200 g.chips
100 gr. Almonds ground
For dipping, dark chocolate chips

1 Preheat oven to 150 °. Bake the baking sheets with baking paper or permanent backing film. Add sugar and vanilla sugar. Mix the curd with bitter almond oil. Mix the cocoa macaroons and the ground almonds.
Preparation:
2 Whip egg whites with salt to a very stiff snow. Slowly add the sugar. (Choose the finest sugar, it dissolves more quickly) Mix the agitated quark shortly under the finished egg white. Cokerasp and ground almonds.
3 Put a teaspoon of pile (double walnut) on the baking paper … pull up a small tip.
4 Push the baking tray into the oven and let it dry for 20 - 25 minutes more than baking. If the macaroons have assumed a light brown color, remove the plates from the oven and allow the macaroons to cool on a cake rack. (They should get from the bottom air)

Completion:
5 After the macaroons are cold, melt the couverture in the water bath and cover with a baking brush half of the macaroons with chocolate. Let the couverture completely freeze and then pack the macaroons only in cans (they stick together otherwise)
Info:
6 By the addition of Quark the macaroons from the outside are crisp …. remain inside but very nice loose and juicy. They also taste very well after a long storage period.

"200g Kokosraspeln" translates as coconut flakes, if I'm not mistaken.

is s misspelling in the recipe, should read Kocosraspeln (and not cocoa macaroons, step # 1) and indeed it is shredded dry coconut.

I would suggest grated and not ground almonds, ground can turn into paste.  ...or finely chopped almonds.  A tiny barrel grater is the norm or purchased grated roasted nuts.

Coconut Almond Macaroons with Quark (50-60 pieces)

5 egg whites (fresh)
1 pinch of salt
160 g superfine sugar
1 tbsp (homemade) vanilla sugar
70 g low fat quark, drained in sieve
8 drops bitter almond oil
200 g coconut flakes
100 g almond meal

100 g semisweet or bittersweet chocolate, for brushing

Preheat oven to 150ºC/300ºF (convection mode). Line baking sheets with parchment paper or silpat. In separate bowls, mix sugar with vanilla sugar, quark with bitter almond oil, and coconut flakes with almond meal.

Whisk egg whites with salt until very stiff, while slowly adding superfine sugar. Add quark mixture and mix in briefly. Fold in coconut/almond mixture.

Using teaspoon, place dollops of batter (twice the size of walnuts) on prepared baking sheets, with a little peak on top.

Place baking sheets in oven and let macaroons more dry than bake, until they are light brown. Let cookies cool completely on wire racks.

Melt chocolate in water bath. Brush half of each macaroon with melted chocolate. Let set completely, before storing cookies in tin cans (otherwise they might stick together).

(The addition of quark to the batter makes the macaroons - though crispy from the outside - nice and moist inside, and keeps them fresh even after days.)

You can substitute the vanilla sugar with 1 1/2 tsp vanilla extract and use cream cheese or Greek yogurt instead of the quark. I don't know whether you can get bitter almond oil in the US - in Germany it's available in every supermarket (Dr. Oetker brand). If not, substitute with some almond extract.

Happy baking,
Karin

As a Hamburg native I'm always happy to help with German recipes - Google translate doesn't manage to get the details right.
