My guess is their pizza dough as well. They probably spread butter on the top, bake, and then butter again when they come out of the oven to keep them soft (probably not actual butter, but that "butter" stuff which is a mix of oils and some butter flavoring). Sprinkling "parm" on top of the second coat of butter.
But my theory is they use their pizza dough formula and bake them in the same ovens as their pizza, say at least 500° F.
