Thanks for the non-stick tutorial on the pizza.
I've tried many different ways to prevent it from sticking, but I guess I just like too many toppings and too much cheese on my pizza. It's too heavy and, as such, never just slips off the peel. These days, I just stick to parchment (but I trim the parchment before baking, else it burns at 550 F.).
Sure thing... the biggest culprit of dough sticking to a peel is if some sauce gets on the peel and acts as glue. Years ago, pizzaiola used to "blow" under the pizza, loosening it from its peel with an air bubble. The health dept has cracked down on this, and now some restaurants will use an empty squeeze bottle to blast a little air underneath.
Parchment works good too. ;)

(Note to self. Buy one of those cans of spray air used to clean keyboards, etc.) :D
yes... it is amazing. But it does take a little practice. It's best when it scoops the pizza off a stone or fermica surface:

I'd have to second Barbara on Frankie G's website. Great products (some hard to find), great prices, wonderful service. As for Natalie being lucky, I think she's probably the real power behind the throne and a rising star to boot. If anybody hasn't seen Frankie's Timpano video, get going.
