What to do when you can't complete the recipe?

Help! I'm in the middle of making a pretty simple sandwich loaf (maple oat with yeast, no starter or anything like that). I've just started the first rise, but then looked at the clock,  and realized I will have to leave right when I need to shape the loaves and rise for the 2nd time. I won't be back home for another 8 or so hours. What should I do?

There are a few options which may work;

If you have the time, you could shape the loaves and then retard them in the fridge.

You could try to bulk ferment the dough in the fridge.

Or you could freeze the dough and continue on as you would once you thaw it. A lot of the yeast will be killed off so it will take longer to rise, but it should work.
