I intend this post and comments to give Fresh Loafers a heads-up when bread-baking or pizza Kindle ebooks go on sale at Amazon for either heavily discounted prices, up to usually $4.99, or free.
I'll start off with four books that are always (at least have been for a while) free. Three are public domain.
As new books go on sale I will (or you can) add them to the comments. I mostly get these notifications from a service at bookbub.com. The sales usually last from 1 day to a week, so act quickly. Most often the sales run Monday through Sunday. The "tag" with "frog" in it, is so the webmaster can make a few pennies in commission, like his sidebar links.
All the major bread authors have sales, Robertson, Reinhart, Forkish, etc.

About a fourth of the book consists of stories of bakers and bakeries.
The recipe index doesn't show in the free online sample. But once I downloaded it, I fell in love with the book as soon as I read the TOC and recipe index.
In my opinion, home-millers need this book.
If you want to bake with store-bought stone-milled flour, you need this book.
Recipes use whole grain and/or high-extraction flour, all stone ground. Includes rye breads and rye desserts (cookies, brownies, pies).
This is a super deal at the sale price.

But credit goes to Bookbub. I get a daily email of discounted titles with at least one cookbook. When I saw bread/pizza cookbooks discounted, I then noticed that it's a semi-regular thing for most of the major authors/publishers. Kind of a loss-leader to spur word-of-mouth advertising, I suppose; or people then go on to buy a hard-copy. I bought hard-copies of Chad Robertson's main two books after getting the ebooks for only 2.99 ea.
Unfortunately, Hamelman's, Ginsberg's, and Leader's never seem to be discounted. And some were one-time only, such as Stella Parks' Bravetart.
I'm glad I built my hard-copy library pre-pandemic. Hopefully, when/if the baking craze tapers off, used prices will come down.

The reviews are mixed. Apparently, the book is not for raw-beginners, nor for those advanced bakers whose sourdough experience might unnecessarily color how they interpret the instructions.
Bittman allegedly invented new terminology for how he has modified traditional starter/levain prodedures.

I gather that it is a challenge for both raw beginners and for experienced sourdough bakers to closely match both his ingredients and procedures in order to hit upon the sweet-spot that his formulas require.
Some of his formulas use volumetric measurements, and I assume that is where at least part of the problem lies. Different types of whole wheat (stone ground versus roller milled), and how one scoops or fills a measuring cup result in differences big enough to affect the outcome.
I'm posting this as the price makes it worthwhile, especially for those considering buying the hardcopy.

It's mostly about using sprouted flour. Sprouted flour is flour made from sprouted grain.
I bought this because it has "whole grains" and "heirloom flours" in the subtitle, but it's almost all sprouted flour, which is expensive. So get this if you're into flour made from sprouted grain. If all you want is whole-grain, then his "Whole Grain Breads" would be better for you.

I have this ebook. The story is moving. The photography is gorgeous and highly professional.
The ratings are: 4.6 out of 5. --- 78% 5-star, and 12% 4-star.
The book's formula for the famous Poilane miche is based on a poolish/starter made with yoghurt, and then commercial yeast is used in the final mix. Some reviewers felt cheated, but others felt it was a legitimate approximation for those who don't want to create and maintain a true sourdough starter.
There are also formulas for rye and barley breads, other baked goods, and non-oven dishes. There is a lot more than just bread.
Personally, I would not pay full list price for the hardcover. But for this price, this is a super deal to have a piece of the Poilâne story, the photos, and recipes for French cuisine.

I downloaded it and skimmed through it, but have not done a detailed read yet. I can't say yet whether it is easy to follow or not.
It shows how to build a round dome style (hemi-spherical, not barrel-shaped, a la Alan Scott) oven using packed sand as the inner form.
As a free book, you can't go wrong getting this, especially if you think you might ever want to build your own outdoor brick oven.

This is the 2016 edition, by Skyhorse Publishing. The recipes use gram weights, not cups.
Has some whole wheat recipes. Has some 100% rye recipes.
(All, or at least most, of the Amazon reviews are for the original edition, that had measurements in cups.)
GORGEOUS photos.
The Kindle edition on Amazon is the 2011 edition with cups. So I do not recommend it.

This book goes into why and how to use a baking steel versus a baking stone.
Has 8 dough recipes, including one whole wheat, one sourdough, and a Chicago deep dish. It also contains recipes for several types of sauces and pizzas.
I'd say the book is as much about pizza as it is about the pizza-baking steel.
It also has some simple recipes for naan, pita, biscuits and scones.
I have purchased it. If you do not already have Tony Gemignani's (who is a big proponent of baking pizzas on steel) "Pizza Bible", then I would recommend this ebook at the sale price.
If you do already have Tony Gemignani's "Pizza Bible", you don't really need this, IMO. But, if you're a pizza cookbook collecter, get both.

I purchased it. Of particular inferest to me: It has 4 whole wheat formulas, 1 whole Kamut formula, 1 whole spelt formula, and 1 whole rye formula.
It has a really good looking gluten-free seeds and rolled oats loaf.
I like the pizza method: start in a cast iron pan on the stove top and finish under the oven's broiler element.

This is the one that is mostly whole grains and specialty/heirloom grains. Four bucks is a great price for an ebook of this quality.
Robertson's method takes a bit more study than, say, Peter Reinhart's teaching methods, but the effort is worth it.
The photography is superb. When I read this ebook, I knew I had to get the hard-copy.
I realize cookbooks in ebook format are not as handy as a physical book, for all the flipping back and forth you need to do when cooking. But if you're not yet sold on buying a hard-copy of this book, this is an inexpensive way to see if you want to add the physical book to your library.

My review: Has 9 formulas, two of which are baguettes -- one with dry yeast and one with sourdough.

The formulas do not have instructional or in-process photos. So, this is not a great book for beginning bread bakers. Finished product photos are all black-and-white.
The book is educational / informative with a lot of tech explanations on the intricacies of flour and wheat. So, I'd say it's for someone who already has the basics of sourdough bread baking.
I do recommend the book, but not for your first or only book on bread.
Really good info and stories about baguettes. There are formulas for bread other than baguettes.

This is their original edition, of mostly white flour formulas. It has been followed up by a newer edition (of mostly white flour formulas), two editions of mostly whole grain formulas ("Healthy Bread in 5 Minutes a Day," and "The New Healthy Bread in 5 Minutes a Day"), a pizza/flatbread edition, and a gluten-free edition.
This edition uses volumetric measurements, cups etc.
The idea of the book is to make a largish batch of high-hydration dough (3 cups water with 6-1/2 cups flour) that keeps in the fridge for several days, and then you take out what you need for a loaf, shape, final proof, and bake.
Later editions use grams and ounces as well as cups for measurements.
I wasn't going to feature this because this edition has been replaced by newer ones, but the newer ones are more expensive, and I figured that for $2, someone may want to see what all the buzz was about. This is a very popular series of books.

I have the print edition of this book, and love it.
Measurements are in cups, GRAMS, and ounces.
Extra tables of ingredients were added to show adjustments for different brands of flour.
This is Hertzberg's and Francois' edition for mostly whole grain and 100% whole grain breads. There is a heavy reliance on "vital wheat gluten." It is a necessary ingredient in most formulas. The "5 minutes a day" part is a misnomer. That is the "hands on time" divided out over the total number of days that you keep the wet dough in the refrigerator.
The gist of the book is making a 4 loaf batch of dough, no kneading, giving it a short rise, then put it in the fridge, and then pull out 1 to 2 pound hunks of dough, doing a quick shape, final proof, and bake in a steamed oven.
