the elusive coconut flour

searched thru the forum and found some old threads talking bout coconut flour. was wondering if anyone has got a foolproof recipe for coconut flour? read on the web that it gives a really sticky, dry consistency. would like to bake a cake with the bag of coconut flour i got.

It's not a cake, but the recipe that comes with coconut flour from Bulk Barn works really well.

Cinnamon Sugar Cookies

4 Eggs

3/4 cup plus 2 tablespoons (200 g) Sugar

1/2 teaspoon (2.5 ml) Vanilla

1/4 teaspoon (1.5 g) Salt

1/2 cup (125 ml) Melted Butter

3/4 cup (85 g) Sifted Coconut Flour

2 teaspoons (5 g) Ground Cinnamon

Combine eggs, sugar (reserve 1 tablespoon of sugar), salt, vanilla and butter. Mix well. Stir in coconut flour. Let mixture rest for 5 minutes to allow it to thicken. Combine cinnamon with 1 tablespoon sugar. Form dough into 1 1/2" balls and roll in cinnamon mixture, coating thoroughly. Place on cookie sheet 1 inch apart. Flatten ball to a diameter of about 2". Bake at 375°F (190°C) for 15 minutes. Makes about 2 dozen cookies.

ps: I used coconut oil instead of butter.

You can't just substitute coconut flour for regular flour. Coconut flour is very different. You would need a mix of different flours to mimic a regular flour cake. You my have more luck looking for keto or gluten free cake recipes. I've seen some keto mug cake recipes that use coconut flour but I have not tried them.
