Is KA "Bread Flour" equivalent to 00 flour?
Thinking of trying bagels and was wondering if the King Arthur Bread Flour is equivalent or substitute to "00" ?

A high protein bread flour (like King Arthur Bread Flour) will be a good substitute to 00 flour. You can do a 1:1 substitution. "00" Flour is different than other flours because it is a finer grind.

"00" is a very broad category of flour. 00 specifies the ash%, nothing else. You have to look at further specifications to know what kind/type of flour it is.
There are at least 27 types of 00 flour:
low, medium, high protein %.
low, medium, high strength (W).
Low, medium, high, elastic/extensible ratios, P/L.

I only asked about KA brand because it is what I use for my bread.

No sugar in water bath and New York recipes call for 00 flour. Been watching many "Authentic New York Bagel" recipe videos on youtube and I interpreted 00 as being a high protein flour. I suspect any bread flour will work?
