I have delicata squash growing in the garden so can you please share your recipe? I was very surprised to see you included the shell. Delicata is new to me so I had no idea that the shell was edible.
I also have buttercup squash that I grew. I wonder if I can make pie from that as well.
Yes, butternut is a fine squash for pie! This is the recipe I use. Mr. Strause's formulas are old and now in the public domain. Last year I did a mix of different squashes.pumpkin. That sure made a lot o filling and froze very well! I was well prepared for the holiday baking season!
I love butternut squash but what I grew is called buttercup. It’s a round slightly squashed fruit with light grey coloured stripes on a deep green shell. Flesh is light orange and very thick and mealy when cooked.
Butternut squash is a very Maltese ingredient. Dad always had a huge amount in his tiny patch of earth. In Maltese, it is known as L-aħmar, which translates simply too "The red one"
Going far off-topic, however, I think you would like this Maltese vegetable stew! We were raised on minestra! There is also a savory Maltese pumpkin pie on my youtube channel.
Will that does look great. I still haven’t eaten delicata squash, I keep meaning to try it. I’ll be on the look out for it now that we’re into fall weather. I think using a squash for “pumpkin” pie is better than using canned pumpkin.
Thank you for posting! I am hoping to have a surplus of butternut squash in the garden this year, and it would be fine to make some pie with some of it.
Thanks for stopping by. The oil-packed tuna was drained very well. I have not been getting email notifications of replies. Grrr. I don't remember if I mentioned this above, the next time I make this pie, I will half the amount of rice and double the amount of the squash mixture.

Will, buttercup is a separate variety than butternut.

I will keep an eye out.
Looks like buttercup is used for pie!

Is truly not so bad, That being said, fresh is always preferred! You will like delicata squash good in many applications!

Hi, beth.
Here is a very unconventional Maltese savory pumpkin pie. (We Maltese love a good pie)
Recipe note: The next time I make this pie I will half the amount of rice and double the squash/olive mixture.
When adding the tuna, do you also add the oil it comes in, or do you drain and discard the oil? Thx.
hey, dave.
