Book recommendations?

I'd like to see if there are any good books on techniques recepies for using multigrain and ancient nuts or flours such as whole wheat, Rye, Quinoa, Soy, Almond, Flaxseed, etc.

Any books that has general in-depth tips and analysis on gastronomy and science would be really nice as well. I'd like to see if I can find or make a recipe that can make bread that much more enjoyable, flavorful, and healthier.

It may not give you everything you want, but Peter Reinhart's _Whole Grain Breads_ is a smart and useful book.

I notice this book is from 2007, but I doubt this info is irrelevant or anything. I'm wondering if there was any new discoveries from then until now from newer literatures.

I have Reinhart's 2007 "Whole Grain Breads."  It is very relevant, informative,  and useful still.  His teaching style is good.  You will be able to make your own formulas if you study this book, and make some loaves using his techniques and formulas.

I paid only $12.34 including shipping/handling, on the Amazon used book market.  The Kindle ebook version of this occasionaly goes on sale:  I paid only $2.99 for the Kindle version. Yes, I have both the print copy and the Kindle.

The second most useful book on whole grains and ancient grains is "Tartine Book No. 3" by Chad Robertson.  The Kindle version of this book goes on sale every once in a while, at $2.99 to $4.99.    This is a worthwhile book. I have both the Kindle edition and a print copy.  The photography is very artful, and the bread is beautiful.  Includes seeds and non-wheat flours,

The 3rd best whole-grain bread book I have is "The Laurel's Kitchen Bread Book: A Guide to Whole-Grain Breadmaking", updated edition, copyright 2003.  I paid $7.81 for it, including shipping/handling, softcover, on the Amazon used book market.  This goes into how to sprout and grind/mill your own grains.

I regularly put ground flax seeds or ground chia seeds in my bread. Sunflower seeds are good too.
