Enchanted Irish Lemon Curd Fairy Cakes
Wouldn't you know it......another year of clean living and the Irish Fairies stopped by to leave a St Patrick's Day surprise again this year! Wish The Leprechauns would take notice and follow the Frairy's lead ! Used Rachel Allen's lemon curd recipe and froze it for a year .......Fairies love lemon curd with some age on it. The cake is a lemon sponge with cake flour. I saw the Fairies tossing their dust on them before disappearing till next year.

For our Irish native from Belfast - Sylvia. I can't remember where I got the cup cake recipe.
Lemon Curd
2 eggs and 1 yolk
1 stick of butter
¾ C sugar
zest and juice of 3 lemons.
Mix and slowly heat on top of the stove in 2 qt sauce pan until mix thickens into thick curd. Put in refrigerator for 4 hours to thicken further.
Irish Lemon Curd Fairy Cakes
- 5 egg yolks
- 2/3 cup sugar
- 1 teaspoon grated lemon peel - 1 lemon
- 1 tablespoon lemon juice - half a lemon
- 5 egg whites
- 2/3 cup sifted cake flour
- 1/4 teaspoon salt
- 16 oz lemon curd
- 1/4 cup powdered sugar
Preheat oven to 375 degrees F. Grease and flour 20 muffin cups.
Beat egg yolks till thick with a whisk in a bowl. Gradually add 1/3 cup sugar in several stages beating continually.
Whisk in the lemon peel and juice.
Beat the egg whites utill soft peaks form. Then gradually add remaining 1/3 cup sugar and beat till stiff peaks form. I use a hand mixer for this
Gently fold the whites into the yolks.
Sift together cake flour and salt and gently fold into egg mixture.
Fill muffin cups 2/3rds full. Bake at 375 F for 10 minutes, rotate the cupcake pans and turn down the oven to 325 F convection this time and bake about 5 minutes more until the tops are nicely browned.
Remove cakes from tins and cool completely on a wire rack.
Use a sharp paring knife to cut into the top center of each cupcake, removing the cone shaped piece and reserve.

liked the Curd Cakes. Now we have to get the leprechauns to take notice, follow the fairies and leave some of their gold dust behind :-) Got a biga based, sort of Ballymaloe Brown Bread (used Guinness instead of water) proofing that's just about ready to go in the oven for some Irish Rubens tomorrow - if there is any bread, corned beef and cabbage left over from dinner......will post the bread later. Once the corned beef hits the pot and the bread hits the oven, the house just smells like Ireland!

Hope you have some bread left over to show us. Your celebration dinner is making my stomach growl.
We over proofed it but it turned out OK. Put some picture up of the feast too and will post some Irish Ruben pictures there too. Glad you liked the fairy cakes.
My Mom used to make a chocolate version of these and put them in our lunch boxes when we were kids. She called them tophats. It was great because the frosting that would usually go on top was the filling and the little top kept the frosting from sticking to the waxpaper wrapping(no plastic wrap in those days).
I'll bet the lemon curd ones were delicious and oh so much more grown-up! Nice baking again, DA. Thank you for bringing back a fond memory.

a chocolate sponge, chocolate truffle filled fairy with cocoa powder on top would be a killer and sure to make the list next year! What a great idea Linda. We love chocolate more than anything......but these were pretty good too. Glad to bring back fond memories for you about your mom and her tophats !

Since you mentioned Rachel Allen, I watched her cooking shows yesterday in celebration of St. Patrick's Day. LOL I also watched Clodagh's Irish Food Trails. It was nice learning about Irish cuisine, such as colcannon and Waterford blaa bun/roll.
The dinner must be oh so delicious.
right on the plate by mixing the potato with the cabbage :-) The dinner was a once a year treat and it was so good. Have post separately on it with the Brown Bread we made. Fairy cakes were a nice change from scones this year. The Waterford factory, besides the Blah, is a must see when in Ireland. The museum pieces are unreal - the eagle and the grandfather clock are wonderful. Glass masters get to take a year off from production to produce a piece of their choosing for display. We managed to get an apprentice bowl from a friend - the bowl that the long time apprentice had to make to prove he deserves to be a master .....and is usually presented to their mother - a real family treasure.

Then again, maybe the fairy dust is just to make us believe in so many things that our human logic would not consider believable ? The Fairy Cakes are quite lovely and I'm sure that the fairies will share their delight with those fellows guarding the kettles of gold. Not that those fellows are into sharing their gold!

great and the fairy cakes were very tasty Barbra. Have a separate post on the dinner. Those leprechauns are pretty stingy with their gold and won't even let go of a little gold dust when tempted with Fairy Cakes!
Now on to Easter baking....another yearly treat! I haven't given it much thought but want to try a take on something traditional that we haven't baked successfully before - which pretty much leaves the door wide open:-) Want to do a desert, maybe a Polish Babka something aruther.... and maybe a Greek Orthodox ring bread with eggs or something rustic in the shape of a cross? Maybe I will just tag onto why you GMA's are doing. Any ideas?

kitchen guard fish anymore. Since being converted over to grain carbs from fish - they would wolf the fairies before they could say poof! I need to get the piranha hooked pretty quick on that soy based textured protein stuff they use to make fake Krab. They would probably like that better and the fairies would be safer:-)
