ITJB Apple Cake for a nice break
I said I was going to take a break and bake other things, and I am determined to follow through. We made our annual pilgrimage to Apple Hill in the Placerville area of California, USA this past Saturday. We go every year to buy fresh apples, eat too much apple pie, and enjoy the Fall season, mountain air, and fresh apples. With a half bushel of Stayman Winesap apples we brought home sitting in a corner in the kitchen, I had to bake Aunt Lillian's Apple Cake from Inside the Jewish Bakery. We are very glad I did, because this is really, really good!
The book says this is great with a cup of coffee for breakfast. In the interest of thoroughness in testing, I had to try it.
The book is, of course, right! This makes a great replacement for toast, and even for everything else, at breakfast. It is light, sweet but not cloyingly so, and tastes like apple, not like cake with a bit of apple in it. It does go great with coffee.

OWS, that is a beautiful cake! I can't wait to try the recipe. I'm planning on taking it to my quilt group meeting. It looks really tasty.
at your meeting! I suggest that you try the ring mold if you have the 9 inch size suggested in the book. I baked in the 9x13 rectangular pan, but I think the ring would make a classier presentation. Either way it will taste great.

The aroma of this cake baking in the oven is fantastic! I did put it together in a 9 inch tube pan. It's going to be a nice big cake! I'll take pics, once out of the oven and removed from the pan. I'm sure the quilty ladies will LOVE it!
I look forward to seeing a picture of the ring molded cake. I'll keep an eye out for your post on it.

I've been in love with that recipe from the first time I saw it with other testers. I have a waiting bowl of apples picked with only Aunt Lilian's cake in mind... It was the first recipe I went to when the book arrived.

I want some. Apples around here were all picked by mid October. California crop comes in later I guess. -Varda
This Apple Hill is up at close to 3000 feet, so it is later for sure. They also work hard to stretch it out, because it is as much or even more so a tourist business as it is an apple business. Then they switch over to Christmas trees with a lot of farmed "You cut" opportunities.

Hey OWS- I love Apple Hill!!! I went with my best friends family last year!! We got apple fritters! They were HUGE, and super yum!! That apple cake looks awesome! My dad LOVES apple anything! Next time, put a small pan alongside the big one so you can sample it early Or, take it sliced, laid out in a ring on a nice server and no one would ever know it was one piece short! They might notice if it were two or three pieces short though. :)

The apple cake was a hit with the quilting group. Everyone gave it two thumbs up! The cake was sweet without being too sweet and the cake surrounding the apples was tender and light. I might go for less solid apples (used granny smiths) as it was somewhat difficult to cut without tearing the cake apart(or else the quilt room needs a sharper knife!) Also I think the cake in the 13 x 9 pan would not have that problem since it is not as high as the cake in the tube pan. However it was so good, I had to have another piece tonight after dinner. I can't wait to try more recipes from the book.
