Any Ben Starr fans on the forum?
I'm new to sourdough baking, but have been making his Simple Sourdough Bread for Lazy People, and I'm happy with the results.
I don't feed my starter until I need more, I use it at 100% hydration and it works.
I don't have the time in my schedule nor the inclination to perform the many steps I see on some of the recipes I see on the forum.
Yeah, maybe you don't get the super open crumb, but anything you spread on those open holes would drop through anyway.
Anyone else out there that feels like I do?
Open means just that - open. Enjoy!
