Olive-rosemary-Parmesan sourdough tin loaf

Today's bake: 950 grams sourdough plus sliced black olives, fresh herbs and fresh Parmesan cheese. Baked weight of 1000 grams.

I like those flavors too and the nice bubbles and aeration. The size looks perfect for sandwiches and indulging in 2 of them.

Delicious looking bread and well baked. I love the flavour affinities of black olives, herbs and parmesan. Thyme and flat parsley would be my pick for the herbs :)

I "created" this recipe for our new neighbor who reminisced about some olive sourdough she had enjoyed which was made by her now-departed friend in another city. I'm looking forward to trying again soon, incorporating fresh thyme and Italian parsley. Maybe with kalamata olives. I've always received great flavor pairing suggestions on TFL!
