"Can you make those mock cream buns like we used too get at the school canteen" Yes i can: SO i did: And they were, only better: i had hoped the requesters (twins) were going to turn up in their school uniforms for the occasion. they said they would have if they could have squeezed into them. Anyway the whole Fit for Life group enjoyed them with their coffees today. The mock cream was made with 100g of caster sugar 78 grams of water bought to the boil and simmered for 5 minutes stirring the whole time. Then cooled. 225g i used 250g (whole pkt) of unsalted butter whipped till quite white then half a tea spoon of vanilla essence and drizzle in the cold syrup whilst still whipping. i was surprised to find that the old Ras Plum jam is still available from Bakels in 15kg tins, i opted for just a jar of plum jam. The ladies thought that was a mistake, i said i'd never use it all, they assured me they would do their bit and help each week! So there we have OLD SCHOOL CREAM BUNS revisited 50 years on.

Well don’t those just look so inviting!  I’ve never seen that method of “mock cream” before, interesting and it looks quite similar to whipped cream.  Is there an advantage to making cream this way versus just using whipping cream Derek?

Hi Benny i guess i was just sticking to what the ladies and I  remembered,   a couple of the guys thought it was nicer than the fresh cream and it does have a longer life in the fridge so i guess that's the biggest advantage, it was the first time that i had followed that recipe for mock cream, but thought it was pretty good one. That amount was just right for the 24 x  65g buns

I've never made a cream like that either, hmmm.

i was looking at various recipes on the net and that one stuck out and had the most stars so it was given the go.

Great retro bake, Derek! I like the mock cream filling. I remember the time when you could buy gadgets that turned butter into cream by some kind of emulsion inversion process. There was even a Kenwood attachment to do it. Probably a throwback to when butter was a lot cheaper than cream and maybe a legacy of pre-refrigeration days.

These days most small bakeries in the UK seem to make their money from the Viennoiserie rather than the bread.

H Lance, it was quite funny that all the older generation remembered the cream buns that inevitably went into school tuckshops and lamented the fact that they are seldom seen these days and certainly not bothered with by the big boys. When i was working at the tech college  they used to buy in boxed product of highly hydrogenated bread fat with added enhancers and emulsifiers for adding to the small production of dinner rolls for the training Restaurant. it took a while to convince  them to use butter which as a government entity was available whole of government contract a lot cheaper. The argument was won when the challenge was to eat a teaspoon of the products.

Yes, hydrogenating vegetable oils was a wonderful process a good few years ago and the product is now considered unhealthy because of the trans fats produced (at least by partial hydrogenation), which were supposed to pass through the body without consequence.....

Now we just eat lots of palm oil instead.

Well Derek, I was born and raised in the fine city of Manchester but now live in an area known as the Ribble Valley. Our nearest town is Blackburn, but we are close to the village of Ribchester, famous for it's Roman history and known in those days as Bremetennacum.

Nostalgia plus! We loved them at school. Our primary school was nearby to a bakery and get them there direct. It was up a laneway and only the local kids knew to go there. 

They look very authentic. Love them.

Wow, lovely.

Our Ottawa-area high school cafe was a pretty grim place. Fries and gravy, rainbow coloured roast beef on white bread. Blech. Nothing the least bit appetizing. Glad others had brighter options!
