Note to self: I don't think the 4C Italian-style bread crumbs were the right choice. Smile...

Pretty happy with the oven spring and the look. The topping definitely needs improvement.

The crumb is not as open as I would like. That being said, far from dense, light, and fluffy!

The topping is a yeasted concoction of bread crumbs and rice flour.

These look great.  How did the topping taste?  I’ve had this at restaurants and usually the topping doesn’t do it any favors

I used 4C Italian bread crumbs I had on hand in the topping mix. Surprisingly the flavor was complimentary. If I make these again I would incorporate the seasoned bread crumbs. However, I would use a finer panko type or run the 4C through the food processor.
