Commercial dough sheeter
Hello everyone!
I am hoping someone can help me? I have a very small micro-bakery/cafe. We are wanting to start making our own croissants etc... But I am not sure which dough sheeter to get. Can anyone recommend a reasonably priced dough sheeter that works well?

I have a floor model Rondo reversible sheeter and I am very satisfied with it. I got it for $7500 used (it was 14k new). I imagine that many of the machines priced over $5000 would be up to the task. We use our sheeter for many things: croissants, cinnamon rolls, pop tarts, oreos, and more. It was very well worth the investment for us. I made 17 dozen croissants per week when I got the machine in 2016 and now we are making 1300 weekly. This is primarily done on Mondays and Tuesdays. We are planning an expansion to produce 3x that number and it would not even be a thought without the machine.
A great option for mini-bakeries would be tabletop dough rolling machines BiFav, as I understand you also do not have large volumes. I roll up to 1.5 kg, a small batch for croissants, several times. They are ideal for puff dough. I have an electric one, but there are also manual models.
