Pan Breads 10% Whole Wheat

My weekend same day bake breads,

I used pans.

10% Whole wheat (King Arthurs) 
90% all purpose flour (KA unbleached, 12,7% protein)
2 TBSP Olive oil
1/2 CUP Whole milk
2 TSP Active dry yeast (Fleichman's)
1 TSP Sugar
2 TSP Salt 
60% water

1st fermentation 5 hours
Folding
2nd fermentation 1 hour 
Scoring

10 minute bake in 445F
20 minute bake in 390F
3-5 min. only broil in high
