Red Star Platinum vs. Saf-Instant Gold instant yeast
My recipe for cinnamon rolls suggests using Saf-Instant GOLD yeast, which, I hear, is ideal for sweet doughs. Is this interchangeable with Red Star Platinum Instant Yeast? Platinum contains two ingredients that the Saf does not--Xanthum Gum and Enzymes. I understand that those are dough enhancers but I want the performance to be identical. Has anyone tried it? As always, I am grateful to all of your expertise!
