My co-workers discovered that I'm baking bread...
So of course I had to make them some loaves! I stuck with a basic recipe courtesy of Maurizio, but upped the hydration a tad and added a teeny bit of spelt flour. This loaf was so tasty, easier to shape than my last few experiments and will keep my co-workers happy.

Wonderful bread. I quite like Maurizio’s basic sourdough recipe, have you tried his spelt, rye and whole wheat recipe?

I haven't tried it yet, but it's on my list of breads to make. I'm running out of flour and my local suppliers are far behind on orders, so I'm just playing the waiting game.
