Ideas please
I have probably missed them in the archives, but I am looking for a SD recipe that is both quick and easy to make. Typically it is for those occasions when you realise late afternoon/early evening that the bread bin is empty and you need a loaf for the next day.
My usual backstop loaf is from Vanessa Kimbell - http://www.sourdough.co.uk/a-basic-sourdough-recipe/. With sufficient starter to hand (100g), 3-4 hours is all that is required for an early morning bake straight from the fridge.
I shall be interested to learn of other recipes that are similarly efficient, but without the shortcuts that instant or dry yeast recipes may imply. I would especially be interested if any cater for NMNF starter, as 100g is unlikely to be available ;-)

at the beginning of the week and place it into the fridge when mature then it'll last a week before it needs feeding again. In that week if you think you'll need a loaf then you can pull 100g straight from the fridge and use for a bread.
... good point, though I generally store less than that (NMNF) and build a levain as required. I guess good discipline is required!
