Artisan Bakeries in Dallas?
We're going to visit family in Dallas, and I'd like to squeeze in visits to a bakery or two while we're there. There are NO artisan-style bakeries around here, so the only "artisan" bread I've tasted is bread that I've made. I need to try some professionally made breads to know what I'm aiming for in the taste dept. Photos can only tell you so much. :)
https://www.facebook.com/villagebakingcompany They do some beautiful levains and olive breads and killer croissants and (their specialty) kouign amann. They formerly sold only in farmers' markets but have opened a retail store in University Park near SMU. These are serious folks and Dallas is lucky to have them!
Also, if you happen to have Maggie Glezer's Artisan Breads book, there is a bakery from Dallas listed there that makes German style ryes. (don't recall the name and the book is not at hand right now) I believe it's a trade-only establishment but maybe they would give you a tour.

Pulled out my Maggie Glezer book. The bakery is called Dutch Regale Bakery in Dallas.
