Errata in Hamelman Techniques and Recipes 2004
Wanted to bake a bread "by the book" and, unfortunately, ran into problems on Day#1. Page 358, making the liquid levain ...... 11 oz are not 685 grams and 10.9 oz are not 605 grams.
You're misunderstanding how Hamelman has his tables organized.
The first two columns correlate with each other (U.S. and Metric) although he usually rounds numbers as he did on this page. The third column (Home) is a smaller recipe/batch size for the home baker and is there for the sake of people who use volume measurements or aren't interested in making much.
Personally, I always extrapolate from the Metric column regardless of the batch size I'm making.

... to notice that in the two columns "U.S. and Metric" he uses fresh yeast for his measurements and for the Home recipe he uses instant yeast. So if you're converting from the larger batch size, you also need to convert the yeast measurement (assuming you're not using fresh yeast).
