"Singing" bread

I love to hear the crust "sing" when first out of the oven. Lovely crisp cracking sound.

Thank you. They are Hamelman's Vermont Sourdough I bake every week for years. These are 10% stoned ground whole-wheat I mill the day before. Never misses!
