Hot Cross Buns for Easter

Getting ready for our camping adventure over Easter with family. Baked these Hamelman's Traditional English Hot Cross Buns today. I may have to bake another lot. These are 75-gram dough each; formula below.

Those look amazing Gavin, thanks for sharing the recipe with us.  I’ve never made these before and always wondered how much better a homemade hot cross bun would be compared to the so so ones I’ve had from grocery stores.  I never like those well enough to consider making them, but not I’m interested.

Thank you, Benny.  The crossing paste is just pastry flour, vegetable oil and water whisked together and applied at the end of final proof before baking. The syrup is equal parts sugar and water by weight and heat in a saucepan. The homemade ones are far better than bought and have some guts to them.

The Hamelman recipe is somewhat involved but the results were stellar like yours. I really liked his crossing paste versus the fondant that you normally see.

Thank you. I made a second batch yesterday that was not as bold in the bake. Job done for another year. They are all in the freezer ready for Easter.

Eildon. About 3 1/2 hours with a stop at Yarra Glen for lunch. We go for a week.

That should be nice i thought perhaps you might have seen enough water over East. i have just come back from a week away to Stokes Inlet on the South Coast in the National Park where we caught our bag limit of 6 Black Bream each day. The inlet has been closed from the sea for 5 years but holds some nice fish, King George Whitting  as big as your forearm and the bream up to 40cm and i also managed to catch an Australian Salmon a first for me  and took half an hour to land on 7 lb line.
