Challah

The request for a good Challah recipe that was not sourdough had me posting my recipe that I have used since the 70's. I haven't been making it weekly as I did for decades since I have been working with wild yeast and have been exploring artisinal breads and formulas. It felt wonderful to have my hands in the dough and to knead and develop with only 10 min. of effort. None of the 3 days that I have been spending lately with a minute or 2 here and there. Different but nice in its own way also.  Crumb later when it cools. c

Someday, I'll make a challah that looks that good. 40 years' practice? Hmmm...

You will note that my 3 strand braid always shows up...I am VERY limited on talent when it comes to braids LOL.  Took a good while to figure out the round and then I stopped learning. Will do your SJ improved version tomorrow. Will post and let you know how it goes. Thank you David. BTW will  be in San Diego for 4 weeks...the whole month of September. Am really looking forward to the weather and the food. Are there any bakeries though??

I know what you mean about those lovely fun to make and eat breads we love to get out hands into,  I have been busy and making some challah now would fit well into my time.

If you happen to be in the area of the lovely little town of Rancho Sante Fe..close to the Del Mar racetrack.. do be sure and have lunch here.  They don't bake a lot of breads, but what they do bake is devilish devine pastries, pies, cakes and cookies.  I have often walked there with my daughter to enjoy an outdoor lunch and pastry...the locals love this popular little cafe.

Claire was once a neighbor of my daughter and her two little girls would play with my granddaughter..now they are all grown up.   Claire worked baking bread for a local large delicatessen called Milton's Delicatessin in Del Mar.  She developed a formula for her multigrain bread and it is now called Milton's Multigrain Bread.  You can read about it on her Claire's on Cedros site.  You can also read or google about her Green Award for the building.  Her lunches are devine and she is also located right next to Del Mar at Solana Beach, Cedros is a nice street area to stroll and check out the local shopping.

Enjoy your trip to San Diego..lots to do here and enjoy the cool ocean breezes.

ADDED:  I nearly forgot,  if you are in the Del Mar area there is a wonderful little bakery all fresh baked breads etc..you can google it for photos.. It is in a little shopping center and is called 'Village Mill Bread Co.' the owner/baker lady is often at the counter.  The address 12845 El Camino Real, Del Mar

Thanks david I will post and see what folks in the area say. Also it is 35 years on the Challah practice so you have LOTS of time :)
