Well after My Wife's fathers death we had another death in the family, tough times people. 

 

After that I went on the road for a bit to try and deal with my stuff. I won't bore you with all the details of my walkabout, but suffice to say it helped.

I went to Portland Oregon through Mammoth Lake CA and Bend OR fishing my way up. I did go to Mr. Forkish's place for some pizza and breads. On the way back I made the 9.5 hour drive to outside San Fran and pick up some of Chad's Soughdough the next day. But on Sunday bread does not come out to 4pm! I pushed my anger down by buying some Croissants (after waiting 1.5 hours in line). Once back home I hmade my first attemp at 100% Whole wheat bread with some flour I bought in PDX. My wife was going through food withdrawals so I baked and cooked to get her better.

I haven't felt like baking much lately. You see my Father-in-law lost his one sided fight with Parkinson's. He, and I, are NOT religious, in fact with think it is a lot of hooey. But I digress, he was a brilliant man, full of laughter and knowledge. Self made, hard working, dedicated family man.

He would love it when I would come to the Island to see them because he had an excuse to go buy some beer. His wife had a rule about beer; If someone brings it over or if family comes to town he could buy it and drink some, strong wonderful Lady. I still remember the day I asked his permission to marry his daughter, he said "oh, I thought you were going to ask for money" we laughed and then he said "Yes, yes you can" we drank a beer. Then in the blink of an eye he was diagnosed with Parkinson's and a short 5 years later his light was snuffed out.

I say all the time, "It's all part of the ride we are on" meaning aging, loving, hurting, aches and pains, lines on our faces, the loss of hair, the decline of our sight and so on is all apart of the ride we are all on, so I try to embrace it all. I don't buy into the beauty cream, anti aging, extended sex drive, miracle cure crap. Why spend all that time and energy trying to hold back the inevitable when you could be embracing it and living now!

I guess what I am saying is Parkinson's sucks and what a raw deal it was for him.

Anyway, rant over, just venting. Sorry if I offended, I know how people can get about religion.

Organic Sourdough, no GMO's

I have been layed up with a twisted foot so I have had a busy week Baking and Cooking.

The Bread is a new one for me in Hydration. 28% Whole Wheat Sourdough at 80% Hydro, one with Lemon marinted  Olives and Oregano. The next with Toasted Walnuts and Sage.

Mixing in the flavours…..

Proofed and ready to bake after 16 hours...

Leftover Dough made into Pizza...

Also made Char siu bao for the sainted wife...

Then a Pear and Hazelnut cake for her workmates...

And some ribs for good measure...

Attemtped some Ciabatta, this time not such a bold bake was requested by the sainted Wife.

okay crumb but not quite there, back at it.

Made some Gnocchi the other day too.

Gnocchi with fresh sage, chicken in a brown butter sauce topped with shredded Parm

I based my formula on Reinhart's. I used a Biga and let it proof in the fridge for 20 hours then mixed by hand. S&F every 30 min for 2 hours, bench rest for 30 minutes then shape and bench proofed for one hour.

Baked on pizza stone with steam at 480F

Some good blistering

and a nice crumb, for me

Here is a couple 16 hour Sourdoughs and some Scones I made for my Wife's co-workers, plus some food.

I used leftover water from after boiling some pasta the night before, the crumb was great.

Buttermilk, Currant, Toasted Almond and Lemon Zest Scones

Grilled Spring Lamb Chops with Smashed marintated Potatoes and Strawberry- Arugula Salad
