UPDATE - Light/Soft Bottoms
Hi Everybody,
Just wanted to drop a note to say thanks again to everyone who provided advice in this thread a few days ago. I tried out some of the recommendations, and got a bottom crust I'm much happier with. I've attached a photo of my new oven arrangement, as well as the nice toasty bottom of my latest bake (unfortunately I don't have any pictures of pre-rearrangement results, but trust me: they were white!). Thanks everybody for the support!
Super! Yeah steam is a tricky thing for the home oven. Looks like you set up a nice compromise.
Glad that you have it figured out Teejay, it took me some time to figure out what works in my oven as well.
