Demonstration of my DIY dough loader
My original post about making the dough loader is at DIY dough loading peel | The Fresh Loaf
I was urged to make a short video about using my DIY dough loader. This was made today, loading three baguettes onto the baking stone. You can check out the video on YouTube using the below link.
Here is a picture of the finished bake:

That looks cool and very easy to use, more precise control than sliding off a peel.
I was holding my breath afraid that you forgot to set up the steaming, but you can just press a button for that, neat!
Thanks, Ilya. The control is very good and has made loading multiple doughs very easy. Having a steam function on the oven has been a game-changer. I no longer have to manage cast iron pots and remove them partway through the bake. This oven has a "moisture plus" function whereby I can inject up to three lots of steam automatically or manually. I usually inject some steam about 5 minutes before loading the dough and then one just after loading and another five minutes later. The oven vents so that the loaves finish in a drying oven. I love the ease and usually get a good finish. I feel spoiled :)
I love it Gavin, well done on making that DIY loading peel. Thanks for doing the video too. I was going to ask how well your oven’s steaming function worked but all I had to do was look at your baguettes to know that it works well. Your baguettes are looking great 👍
Thanks, Benny. It took some time (weeks) to get my wife lined up to take the video. I love the steam function on this oven as it has made baking much easier. I use the loading peel with every bake; one, two or three loaves. I'm indebted to Lance (albacore) for the design concept.
