What do you do when you are
overrun with papaya?
I have an abundant crop of papayas right now. I've made Smoothies, jam and fresh fruit and now a papaya bread. It turned out very tasty but it is also very dense. More like a pudding cake.

try some green papaya salads and look up some recipes like pork and green papaya or green grated with spicy chili dressing. Loatian or Thai style. Mmmmmm.

Papaya has a protein-digesting enzyme called papain; could that, as well as possibly extra moisture, have contributed to the bread being so dense?
Great catch! Cooking the papaya before addition to the dough would kill the papain and likely spare the dough’s gluten.
I found out the hard way that the papain prevents gelatin from setting in pannacotta!!
