Rustic loaf - Jeffrey Hamelman
This Rustic loaf is my regular weekly loaf and never misses if I am true to the process. I use instant yeast to make only one loaf at a time. That's what I like about Hamelman's book; you get the bakers per cent and I can rescale one 750 g loaf to suit my banneton.

Gavin, that's a gorgeous loaf of bread! I'm the same as you, I've got my go-to recipe that performs very predictably if I stick to my process. I bake bread pretty much once a week, and I bake two loaves (one for us, the other to give away.......amazing how much people enjoy the gift of good, fresh bread!)
You have great spring, color, crust and crumb going there! Looks absolutely delicious!
